Cheesy Chicken & Rice Casserole

This is the PERFECT easy "go-to" meal when you can't decided what's for dinner!!
It's simple and can be changed up a number of ways!

Cheesy Chicken & Rice Casserole

From: This is in a number of recipes books

Prep: 15 minutes
Bake: 50 minutes
Stand: 10 minutes
Serves: 4

1 can (10 3/4 ounces) Condensed Cream of Chicken Soup
1 1/3 cups water
3/4 cup uncooked regular long-grain white rice
1/2 teaspoon onion powder
1/4 teaspoon ground black pepper
4 skinless, boneless chicken breast half (about 1 pound)
1/2 cup shredded Cheddar cheese

Optional Ingredients:
2 cup frozen mixed vegetables - Add along with the soup and main ingredients
1/4 cayenne pepper - Add along with main ingredients and sprinkle on top

Heat the oven to 375°F.
Stir the soup, water, rice, onion powder and black pepper in a 2-quart shallow baking dish.
Top with the chicken.
Cover the baking dish.
Bake for 50 minutes or until the chicken is cooked through and the rice is tender.
Top with the cheese.
Let the casserole stand for 10 minutes.
Stir the rice before serving.

I love casseroles. You can throw a bunch of stuff together, bake and have a delicious meal.

I looked everywhere for this recipe yesterday, I wanted to make it for dinner, but couldnt remember all the ingredients. Then, today, I stumble upon your blog, and fancy that, there sits the recipe!
